Tickets are now on sale for the RMI 2022 taking place at Moorgate Place, 17th & 18th January. I will be hosting an interactive session, new to the 2022 programme, on day two of the event. I will be taking a live brief on stage of a menu that needs attention and talk about the techniques I use to add scientific rigour to the placement and design, coming back on stage later in the day to show the end result.
