Menu Science, or Menu Engineering as it’s also called, is the process of developing a brand or venue bespoke menu, taking all relevant variables into consideration, to maximise the experience for the customer and profitability for the operator.

Science meets art

The term ‘menu’ covers a range of different means of communicating your food and drink offering to your customer. This could be a printed menu handed to the guest on arrival, an order and pay at table menu, a printed or digital menu board, a drive-through menu or a website menu. Each of these menus have different customer interaction dynamics and these factors should be taken into consideration when creating the perfect menu.

Meet the Menu Scientist

Claire Scullion heads up the Menu Scientist team and brings their range of skills sets together from research, design, creative, project management and collaboration.

“I began looking in greater detail at the art of menu science in 2012 while working with Whitbread’s restaurants. Realising it was possible to make a tangible difference to the profitability of a menu based purely on its design, began a love of behavioural science and striving to understand the way consumers navigate their restaurant journey. The menu plays a significant role in this journey and not only do the restaurants see the obvious benefits, but customers also receive a better overall experience when more time and thought is afforded to the menu.
